If you know me, you know I love overnight oats, and I love pumpkin. Just like all orange vegetables, pumpkin contains Vitamin A, which is good for your eyes. It’s also a good source of immune-boosting Vitamin C. Add fiber-rich oats, calcium-rich dairy (yogurt and milk), and a dose of heart-healthy fat from ground flaxseeds and you’ve got a balanced breakfast to start a cool fall morning off right.
