Okay, so I have to admit, I’m not big on casseroles. But when someone has a baby or is sick in the South, toting a casserole on over is the only appropriate response. I’m at the age where many of my friends are having babies lately, and several of them want to eat healthy too. So instead of taking a classic casserole, full of refined carbs and saturated fat- and sodium-laden “cream of” soup, I decided to make a more nutrient-rich version of comforting chicken and rice. So get your casserole dishes out, and make TWO batches so you can share the love with someone who could use a hot, home cooked meal.
Preheat oven to 350ºF. Place chicken in a baking dish, and brush with olive oil. Season with salt and pepper.
Bake for 40 to 50 minutes or until a meat thermometer inserted into the center of the thickest breast registers 165ºF. Let cool. Chop chicken into bite-sized pieces.
Increase oven temperature to 400ºF. Cut cauliflower into florets. Pulse in a food processor until cauliflower resembles grains of rice or couscous.
Stir together cauliflower "rice," chicken, broccoli, sour cream, garlic powder, parsley, salt and pepper in a large bowl. Stir in mozzarella cheese and 1/2 cup Parmesan cheese.
Spread mixture in a 13x9-inch baking dish coated with cooking spray (or use two 8-inch square baking dishes).
Bake casserole for 45 minutes. Sprinkle remaining 1/2 cup Parmesan cheese over top, and bake 5 minutes longer or until browned.
Recipe Notes
Place casserole mixture in two 8-inch baking dishes, if desired. Bake one now, and freeze one for later or give the second casserole away.
Mostly of the cooking blogs that I visit are those who just show the recipe and ingredients of a specific dish. Some of them will show pictures as well which is good because I will be able to have some idea how it really looks like. But what I want the most are the blogs that show videos how they cook the dishes because for me that is more convenient, reliable, helpful and entertaining. At least, I will be able to be guided more through the videos because I can just copy what the person on the video is doing.
