Chia seeds have been gaining a lot of attention in the press lately, and for good reason. These tiny seeds are packed with calcium, fiber, omega-3 fatty acids, manganese, and magnesium. They also pair well with a wide variety of fun flavors (like chocolate!) to make a simple, tasty, and nutrient-packed pudding for breakfast, snack or dessert. Chocolate for breakfast that is nutritionist-approved may sound too good to be true, but this recipe is packed with good-for-you nutrition to nourish your body and keep you full until lunchtime.
Chocolate with strawberries is one of my favorite flavor combinations (chocolate-covered strawberries, anyone?). You can also use another fruit of your choice for this recipe, such as cherries, raspberries, bananas and more. In the morning you have a breakfast on the go that you can feel good about eating. OR enjoy this chocolaty treat as a healthier dessert or for an afternoon snack. I top mine with cocoa powder, coconut, fresh fruit, and Greek yogurt.

Combine all ingredients in a container with a lid; stir well to combine. Cover and refrigerate at least overnight or up to 4 days.

Chocolate chia seed pudding looks so good. Could you give me the nutritional facts on it? My husband is type 1 diabetic and we have to be careful. I don’t see anything in this he couldn’t have. I have found a new passion for chia seeds. I have learned by trial and error to make sugar free jam for him using chia seeds. Always a challenge, but I love your recipes.
