Packing lunch is so much easier when you can make it in advance. Sandwiches may get soggy, but wraps can be made a few days in advance and wrapped in plastic wrap to stay fresh. This wrap features pepper jelly, but for a more kid-friendly version, substitute strawberry jam. Baby spinach leaves add a serving of dark green leafy vegetables, and you can round out the meal with a second vegetables (BONUS!) like cucumbers or baby carrots and your favorite fruit.
Spread cream cheese and pepper jelly over tortillas; top with turkey and spinach. Roll up, and wrap tightly in plastic wrap. Pack with a serving of fruit and/or fresh veggies and a low-fat dairy for a well-balanced lunch bag.
Recipe Notes
Use strawberry jam instead of pepper jelly, if preferred.
