Avocado Toast
To add a burst of salty, citrusy flavor to this simple favorite, mash half an avocado with desired amount of preserved lemon juice, and sprinkle with paprika and black pepper to taste.
Roasted Potato Chips
Baked crispy chips get a punch of brightness from the addition of diced preserved lemon.
Preheat oven to 350˚F. Arrange potato slices in a single layer on one or two large baking sheets. Stir together onion, oil, lemon, garlic, and pepper, and brush mixture over both sides of potatoes.
Bake for 20 minutes or until potatoes are tender. Turn oven to broil, and broil 3 to 5 minutes or until browned. Sprinkle with parsley before serving, if desired.
Preserved Lemon Salad Dressing
Add fresh flavor to your favorite salad, or drizzle over roasted asparagus or steamed green beans.
Combine all ingredients in a mini blender. Cover and process until blended.
