Sweet Potato Pie Ice Cream

Ingredients

  • 2 (13.5-oz.) cans full-fat coconut milk
  • 3/4 cup mashed sweet potato
  • 1/3 cup honey
  • 1 tablespoon vanilla extract
  • 1 1/2 teaspoons pumpkin pie spice
  • 1/4 teaspoon ground cinnamon
  • 3 graham cracker sheets, crumbled (optional)

Instructions

  1. Combine coconut milk, sweet potato, honey, vanilla, pumpkin pie spice, and cinnamon in a blender. Cover and process until smooth. 

  2. Pour mixture into the freezer container of an electric ice-cream maker, and freeze according to the manufacturer's instructions. When ice cream is nearly set, add crushed graham crackers.
